The Simplest And Best Camping Breakfasts

One of the first jobs of the day is organising breakfast, and there are plenty of easy recipes to choose from, which are: cheap, incredibly filling, healthy and very popular. The best bit is you can cook them all in a frying pan or in the lid of your dutch oven, over a wood or gas fire. The choice is yours.

Whether you’re waking up under canvas, in a caravan or camper van, mornings can be the best part of the day. Some just roll over and go back to sleep while others put the kettle on and listen to the campsite starting to come alive with early morning birdsong, chatter and laughter while they start breakfast.

The Easiest Pancakes
Stay away from pancake ready mix. They put all kinds of unnecessary things in them, they cost a fortune and you really don’t need them. Instead get a mixing bowl, used plastic drinks bottle with the top cut off, or plastic bag with no holes, and measure out:

1 cup of plain flour
1 cup of milk
1 egg
Mix well and ladle into a flat-bottomed frying pan with a drop of very hot oil in it.

If you like your pancakes light and fluffy put a teaspoon of baking powder in the flour at the dry ingredient mixing stage. Then before you start frying your first pancake make sure the oil in the pan is hot enough by putting a tiny drop of mixture in the bottom and wait for it to start bubbling and turning crispy brown.

In our opinion the best pancake toppings are: crispy smoked bacon with maple syrup; hazelnut chocolate spread with slices of banana; golden syrup; cheese and slices of tomato; cheese and slices of cooked ham; sugar with freshly squeezed lemon juice; and fresh fruit with Greek yoghurt and honey. Yummy!

Muesli With Fruit And Greek Yoghurt
The best bit about this recipe is you can mix it all up before your trip and it lasts for ages as long as it’s kept in an air tight container. Simply mix the following into the consistency that suits your tastes, leaving out anything you don’t like and adding anything extra that you do:

Porridge oats
Toasted wheat flakes
Raisins and sultanas
Dried pineapple, papaya, banana and dates
Almonds, pecans and hazelnuts
Pumpkin and sunflower seeds
Serve with a large dollop of natural Greek yoghurt, fresh fruit and drizzle with honey.

Toasted Muffins With Scrambled Eggs And Smoked Salmon
Bread muffins last for ages if kept cool and in an air tight container so they are perfect for camping trips. You’ll have to keep the smoked salmon refrigerated before you eat it but it is worth the hassle as it really makes this dish perfect.

2 eggs per person, gently whisked
Generous knob of butter
Black pepper and salt to taste
Serve on the toasted muffin with the smoked salmon

If you don’t have a toaster you can make an Aussie toasting fork out of anything metal in whatever shape you want. Simply make sure one end will hold the bread while the other will allow you to stay far enough away from the heat source so you don’t get burnt.

Toast With Crunchy Peanut Butter And Honey
Make some toast
Spread it with crunchy peanut butter and slices of banana
Drizzle with honey
Another topping is the classic PB and J – crunchy peanut butter with raspberry or strawberry jam

French Toast With Maple Syrup, Strawberries And Blueberries
1 egg per person
Bread
Cinnamon and nutmeg to taste

Whisk the above in a bowl and dip a slice of bread until soaked right through. Fry until golden brown on both sides and serve with Greek yoghurt, strawberries, blueberries and a drizzle of maple syrup.
